At a very early age in his Aunt’s restaurant, Jimmy learned how to create and care for others by preparing food with passion, pride and love.
At 17, he moved to Las Vegas, working at the Desert Inn Hotel & Country Club, The Maxim Hotel (the Jewel of Las Vegas) and then under the tutelage of Chef consultant George W. Oddoux, one of the Golden Dozen (the 12 best Chefs in the world). He was certified CEC, becoming the youngest executive Chef in Las Vegas’s history.
Journalist Ralph Pearl wrote in The Las Vegas Review Journal, “not all great Chefs come from Europe, Chef Jimmy Paulino from Upstate NY is one of the greatest Chefs this city has to offer”.
In the early 90’s Jimmy’s family needed him, so he returned home to Rochester. Over the years, Jimmy has continued his love affair with food. He served as the Head Chef for Vesuvio’s, Giuseppe’s in East Rochester, Bobby B’s, and The Mendon House. Jimmy cooked in his own Rochester restaurants, Paulino’s Italian Classico, Paisanos and Giovanni’s in Victor until 2014 when it was sold.
Finding Roncone’s brought Jimmy back to his roots, “I have found my true love, authentic Italian food”. With his youngest son, Dominic and youngest daughter, Nina at his side, Roncone’s Italian Restaurant is once again a family business, located in the heart of Rochester since 1938.
